Dodon’s Reserve Rosé is made from hand-harvested Cabernet Franc grapes from the South vineyard. Picked on September 3, the whole clusters were gently pressed, the juice was fermented in stainless steel until dry and aged sur lie for five months.

Dodon’s Sauvignon Blanc is a blend of five clones of the variety, each offering a unique aromatic characteristic. Planted on parcels of land that have high marine sediment, the grapes are carefully sorted and fermented in stainless steel to protect the aromatic qualities. This wine is a perfect match for salty Chesapeake Bay oysters.

Dodon’s Chardonnay unveils a balance of bright fruit and fresh acidity grounded by weight and richness from barrel fermentation. The result is a versatile, food-friendly wine.

Vinification: Hand harvested and sorted, whole cluster pressed, fermented in French oak barriques with partial malolactic fermentation, and aged in oak for 11 months, 24% new.

Dodon’s Sauvignon Blanc Reserve is produced from grapes grown on the North Slope, a portion of the vineyard consisting of dense marine sediments and compacted oyster shells that enhance minerality. Part of the wine is fermented and aged in cigar shaped French Oak barrels that allow for greater lees contact than barriques.

Vinification: Hand harvested and sorted, whole cluster pressed, fermented and aged in French oak barriques and cigar barrels, 30% new oak, for 11 months with periodic bâtonnage.

South Slope is the Dodon Series red blend harvested from southern oriented parcels of vines. This medium bodied wine is very accessible with moderate age-ability, and is well suited for the dining table.
Variety: 65% Merlot, 23% Cabernet Franc, 9% Cabernet Sauvignon, 3% Petit Verdot
Vinification: Hand harvested, destemmed and sorted, fermented in stainless steel tanks with pump overs, 30-day maceration, and aged in French oak for 21 months.

In 1743, Dodon’s thoroughbred, Dungannon, won the first recorded horse race in Maryland. The race was called the Annapolis Subscription Plate. This Collectors Series blend is the namesake.
